Tags vs Category

I have been doing category and sub category in the organizer. What is the difference in category/sub category and tags?

Categories should be more general, and tags more specific. For example, I have a Scrapbooking Category. I have a Embellishments sub-category. Under there, I have specific tags (flowers, pins, photo corners, photo turns, ribbons, ric-rac) etc. I will usually tag specifics, not categories or sub-categories. I've not played around with the searching much in Elements. I suspect, if you click on a Category, you see *everything* in that category, including sub-categories and tags. If you click on the sub-category, you will see only things in that sub-category and tags. Then, if you click on a tag, you will see only those things with that tag. But, I'm not 100% sure if that's how it would work. I always try to just tag with tags, not sub-categories or categories.
